Chicken Karahi is the undisputed king of Pakistani restaurant and street food. Renowned for its rich tomato base, fiery green chilies, and aromatic spices, a true Karahi famously uses absolutely no onions! The secret to capturing that authentic dhaba (roadside diner) flavor is cooking the chicken on high heat—a technique known as bhunai—which requires a pure, high-heat resistant oil. Using Mezan Cooking Oil or Mezan Banaspati ensures your spices roast perfectly without burning, giving you a flawless, glossy finish.
Ingredients:

1 kg Chicken, bone-in (cut into small "karahi" pieces)

½ cup Mezan Cooking Oil (or Mezan Banaspati for an even richer flavor)

6 medium tomatoes, washed and sliced in half

2 tbsp fresh ginger-garlic paste

1 tsp crushed red chili flakes (adjust to taste)

1 tsp roasted cumin powder

1 tsp coarse coriander powder

½ tsp freshly ground black pepper

Salt to taste

For Garnish: 2 inches ginger (julienned), 3-4 green chilies (slit), and a handful of fresh coriander leaves.
Step-by-Step Instructions:

Sear the Chicken: Place a wok (karahi) or a deep, heavy-bottomed pan over medium-high heat. Add the Mezan Cooking Oil. Once hot, add the chicken pieces and fry until they change from pink to a beautiful golden color (about 5-7 minutes).

Add the Aromatics: Stir in the ginger-garlic paste and salt. Sauté for another 2 minutes until the raw smell of the garlic disappears.

The Tomato Trick: Place the tomato halves face down on top of the chicken. Cover the wok with a lid and reduce the heat to low for about 5 minutes. This will steam the tomatoes, making it easy to gently peel off and discard the skins using tongs.

The High-Heat Cook (Bhunai): Turn the heat back up to high. Mash the skinless tomatoes directly into the chicken using the back of a wooden spoon. Stir continuously, allowing the tomato juices to reduce and coat the chicken.

Spice it Up: As the water from the tomatoes begins to dry up, add the crushed red chili, cumin powder, and coriander powder. Continue to stir-fry vigorously.
